The Ritz-Carlton has introduced a new restaurant called Colony, an international buffet that has already received numerous awards such as Wine & Dine Best Restaurant Guide 2016 – Best Champagne Brunch and The Peak Selections Gourmet & Travel G Restaurant Awards 2016 – Award of Excellence. Boasting seven “live” conservatory kitchens showcasing Chinese, Indian, Malaysian, Western and local dishes, Colony brings you on a culinary journey through Singapore’s heritage cuisines.
The Ice Bar comprises of four counters arranged in a square, serving crustaceans such as Alaskan King Crab, Half Shell Scallop, White Clam, freshly-shucked oysters from four different regions, Poached Live Prawns, Lobster Claws, Australian Black Mussel and Flower Clams on a bed of ice,a salad bar where you can create your own masterpiece and fresh Salmon, Akami Tuna, Makajiki, Swordfish, Shima Aji sashimi and sushi. Cold cuts such as Air Dried Wagyu Beef and Iberico Ham and a selection of European cheeses are housed in a tall glass cabinet a few steps away, flanked by antipasti such as Stuffed Olive and Grilled Eggplant to the right.
The Grill and Rotisserie are where you can get your fill of roast meats such as Slow Roasted Beef Tomahawk, Lamb Rack and Stone Grilled Pork Chop with Hickory Barbecue Glaze. There is also a counter for Chinese barbecued meats such as Chicken Rice, Roasted Duck, Crackling Pork Belly and Char Siew.
The Tandoor gives you a taste of Indian food. There are vegetable dishes such as Dal Tadka and Eggplant Masala, Tandoori Chicken, accompanied by Briyani Rice and Assorted Naan Bread.
The Wok showcases some of the most popular Singapore cuisines such as Braised Pig Trotter with Mushroom and Yam, Chilli Crab, Gong Bao Chicken and Traditional Superior Broth.
The Steam Basket is the place to go to for some Asian delights. There are popular dim sums such as Char Siew Pau, Har Kow, Siew Mai, Shanghai Dumplings, Custard Salted Egg Pau and Lotus Leaf Glutinous Rice. The good-looking chef at the Noodle Station will cook Colony Laksa with Homemade Lobster Ball and Wanton Noodle (Dry/Soup).
The Patisserie comprises of Mini Pastries, Pastry Station, Local Desserts, Ice Cream and Sweet Treats. Be sure to try the freshly-made Crepe Suzette, Assorted Nonya Kueh and the six flavours of Ice Cream.
The Fruit Stall offers you a selection of Chilled Juices such as Apple, Orange, Mango, Pineapple and Pink Guava. There is also a selection of Tropical Seasonal Fruits and Assorted Berries.
