Singaporeans love Japanese ramen and Japanese ramen restaurants know that. Japanese ramen restaurants have been popping up like mushrooms all around Singapore. 

I am a self-professed ramen-lover. Ramen Keisuke Tonkotsu King,    and   are a few of my favorite ramen restaurants.

Konjiki Hototogisu Ramen created quite a stir when its flagship restaurant opened in CHIJMES in June 2018. This award-winning ramen restaurant from Shinjuku was one of the Tokyo Michelin Bib Gourmand 2015-2018 and it was finally awarded one michelin star in 2019.

Following the success of the second outlet at Great World City, Konjiki Hototogisu Ramen has recently opened a third outlet in Paragon in Orchard Road. 

Chef Atsushi Yamamoto has created two new ramens for the new outlet in Paragon – Iberico Shoyu Ramen and Crab Ramen. Let’s try out these two new ramens. 

Konjiki Hototogisu - Iberico Shoyu Ramen

Niigata is known for their local gourmet speciality, ginger shoyu ramen. Chef Atsushi Yamamoto takes a creative spin on it by adding Asari clam broth. Iberico Shoyu Ramen [$15.90] is best enjoyed in 4 steps: 

Step 1: Take a sip of the original ginger shoyu broth blended with Asari clam broth. You should taste a subtle sweetness on top of the light shoyu broth. 

Step 2: Blend in the freshly grated ginger into the broth and taste the warm and piquant flavor. 

Step 3: Squeeze the lemon slices provided and freshen your palate with the lemon-infused broth. 

Step 4: Mix everything together and slurp your noodles loudly to show appreciation to the chef. 

Konjiki Hototogisu - Crab Ramen

The other signature ramen at Konjiki Hototogisu Ramen is the Crab Ramen [$15.90]. The crab broth is made using Japanese blue crabs which are boiled and simmered over long hours. This ramen is also best enjoyed in 4 steps: 

Step 1: Try the original crab broth. 

Step 2: Stir in the in-house special crab & tomato paste which amplies the richness of the crab broth. 

Step 3: Mix in the sour cream which thickens the broth and lends a little tanginess to the broth. 

Step 4: Squeeze in some of the lemon provided to freshen-up your palate. 

Konjiki Hototogisu - Tonkotsu Original Ramen

Chef Atsushi Yamamoto takes a creative spin on the classic tonkotsu broth. Tonkotsu Original Ramen [$13.90] is a blend of tonkotsu and homemade horse oil. The broth is lighter than Ramen Keisuke Tonkotsu King and the low-temperature iberico chasu complements the broth.
