Jelebu Dry Laksa – Premium Seafood Dry Laksa

Jelebu Dry Laksa - Restaurant FrontI was wondering around VivoCity when I chanced upon the grand opening of a new restaurant, Jelebu Dry Laksa.

Chef Renee Tang came up with Jelebu Dry Laksa during the height of Covid-19 pandemic back in 2020. Her creative spin on the classic laksa was an instant hit among Singaporeans and she was featured in numerous articles.

I have not had dry laksa before so I made a trip to VivoCity to try Jelebu Dry Laksa.

The Food

Jelebu Dry Laksa - Scallop& Otah PillowJelebu Dry Laksa has lots of interesting appetizers, all of which look really appetizing. I got Scallop & Otah Pillow [S$18 for 3 pieces] because I love scallops and it sounds so exquisite.

The fresh Hokkaido scallop is slightly seared and topped with avruga cavier for an extra touch of luxury. The otah mousse gives it a little spice and creamy kick while the nori cracker gives it a nice crunch.

The main course is undoubtedly  their dry laksa. You get to choose the accompanying ingredient, between tiger prawns, lobster and crispy ebi.

Jelebu Dry Laksa - Butter Poached Half LobsterThis is Butter Poached Half Lobster Jelebu Dry Laksa [S$38] .

This is my first time trying dry laksa and I am supposed to find that I like it more than the soup version. Chef Renee’s closely guarded rempah recipe coats each strand of rice noodle with an intoxicating mix of herbs and spices. The crunchiness of the deep-fried baby prawns gives another layer of enjoyment to the dish. The juicy and firm lobster meat elevates the humble laksa to a whole new level.

Jelebu Dry Laksa - Kaya GorengThe dessert Kaya Goreng [S$12] is unlike any dessert I have had. I love the kaya coconut mousse in mini chocolate cones which I can finish in one bite. The coconut ice-cream with chocolate soil and salted peanuts is a nice accompaniment.

Jelebu Dry Laksa - Renee's InfusionRenee’s Infusion [S$5] is a mix of osmanthus and chrysanthemum with rock sugar and goji berry. This is a time-honored herbal tea recipe that helps to cut through all the greasiness. You can top-up $1 for a shot of Jia Jia Liang Teh which should blend effortlessly into the drink.
